Korean carrot salad (Morkovcha) is a legendary recipe developed by Korean immigrants in Central Asia. It's refreshing, slightly spicy, and so delicious you'll find it hard to resist. Here’s how to make it:
Ingredients
4 large carrots
2 cloves of minced garlic
2 tablespoons rice vinegar (or grape, apple vinegar)
1 tablespoon soy sauce
1 teaspoon sugar
½ teaspoon salt
½ teaspoon pepper
½ teaspoon coriander (optional)
2 tablespoons sesame oil (or sunflower oil)
Instructions
Julienne or grate the carrots. Add garlic, vinegar, soy sauce, sugar, salt, and spices. Lightly heat the oil in a small pan and drizzle it over the salad. Mix well. Let it rest in the fridge for at least an hour.
If you want to give it a more Korean touch:
Sprinkle toasted sesame seeds on top.
Add finely chopped green onions.
Drizzle a few more drops of sesame oil on top.
