Ingredients
1 cup sushi rice
1 cup water
2 sheets of seaweed
1 small carrot (thinly sliced)
1 small cucumber (seedless, cut into long strips)
1 handful of spinach
2 - 3 pickled radishes
1 tablespoon sesame oil
1 teaspoon salt
1 teaspoon sesame seeds
Instructions
Boil the rice in water, then mix with salt and sesame oil. Sauté the carrots for 2 - 3 minutes and lightly wilt the spinach. Lay the seaweed flat, spread the rice on top, and arrange the fillings. Roll tightly, slice, and sprinkle with sesame seeds.
Notes
You can add scrambled eggs or boiled chicken for extra protein.
For a vegan twist, try using fried tofu and mushrooms.
To prevent the seaweed from breaking, brush the top with sesame oil using a silicone brush.
